JERUSALEM ARTICHOKE CHIPS

A novel change from Chip Potatoes to serve especially with grilled steak or cutlets.
Pare the artichokes and cut them in thin slices, leaving these for an hour in cold water with a little lemon juice.
Take them out, drain them and dry them thoroughly in a clean cloth. Fry them just like the potato chips in deep fat or oil.
