Creamy Brussel Sprouts with Garlic and Bacon

500g small brussel sprouts

100g thickly sliced short cut bacon, cut into strips

1 large brown onion, thinly sliced

1 large garlic clove, crushed

½ cup dry white wine

200ml sour cream (lite if preferred)

Salt & pepper, to taste


Trim brussel sprouts and halve lengthways

Cook in boiling water for about 5 minutes or until barely tender. Drain.

Cook bacon in a hot non-stick pan

Push to side of pan, add onion and garlic and cook gently until softened

Add wine, increase heat until it has almost evaporated

Add sprouts, cream, salt and pepper

Toss and cook until boiling
